Celebrity Seattle chef Kathy Casey is at it again with a new concept at Seattle-Tacoma International Airport (SEA) bringing ease of use and quick pickups to the traveler experience. CHICKY is the first virtual restaurant at a west coast U.S. airport where orders go right through your phone with a QR code and pickups are easy at the established Lucky Louie Fish Shack, located in the Central Terminal. The virtual opening is now underway and QR code signage can be found throughout the airport as well as on the flySEA Airport App.
CHICKY’s menu features simple, fresh, and tasty options from buttermilk-soaked hand-breaded tenders and housemade dipping sauces, to sandwiches, salads, a sticky chicken bowl, chicken and waffles, and crispy cheese curds.
How Does it Work?
All ordering will be digital through a QR code that airport travelers will scan. Orders will be placed through the CHICKY app and will be prepared by the same kitchen staff at Lucky Louie. The guest will receive instructions to pick up their order at a special “CHICKY Pick Up Here” sign at Lucky Louie.
“CHICKY was created to fill a need at SEA, for a chicken focused concept,” said Kathy Casey. “We wanted to create menu items that are familiar and craveable. Ghost kitchen and virtual restaurant concepts are something I have spoken about at a lot of food and beverage conferences; and how they can optimize kitchen back-of-the-house operations while adding more options for the guest and in a very fun way!”
“CHICKY also has a fun back story too. At our test kitchen, we have a large porcelain chicken, we are really not sure where it even came from, but everyone thought it was cute. One day it started wearing a pair of sparkly horn-rim glasses and from then on it became our kitchen mascot CHICKY. CHICKY has even starred in my cookbook D’Lish Deviled Eggs. As she is a bit of a star chicken, I thought who better to base the new concept on!” (Casey laughs!)
Managing partner Stacy House says, “the last couple of years have taught us adaptability and innovation are necessary for all businesses to endure and grow. Change is necessary and we are excited to share this next chapter of our restaurant with the travelers at SEA. We hope everyone enjoys CHICKY as much as we have had creating it.”
“This is a concept we’ve been working on with Kathy Casey since the middle of the pandemic to find easy-to-access options for travelers,” said Khalia Moore, SEA Airport Dining and Retail Manager. “SEA is always looking for new innovative ideas to expand the customer experience at the airport. We appreciate Kathy’s creative drive and forward-thinking concepts. CHICKY is also available on Order SEA, a convenient mobile food ordering service for quick pick-up. Order SEA is another tech innovation including SEA Spot Saver for virtual queuing at the security checkpoints.”
Kathy Casey has multiple locations at the airport, including Rel’Lish Burger Lounge (located in Concourse B), Lucky Louie Fish Shack® (Central Terminal), and Dish D’Lish® (located in Concourse C).
